Ingredients

  • 1 cup asparagus, trimmed and chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the chopped asparagus, sun-dried tomatoes, and mozzarella cheese until well combined.
  3. Season the mixture with salt, pepper, garlic powder, and Italian seasoning.
  4. Carefully cut a pocket into each chicken breast.
  5. Stuff each chicken breast with the asparagus mixture.
  6. Heat olive oil in a skillet over medium heat and sear each stuffed chicken breast for about 3-4 minutes on each side.
  7. Transfer the seared chicken breasts to a baking dish and bake for 25-30 minutes or until cooked through.
