These Air Fryer Sweet Potato Cubes are a deliciously crispy and creamy side dish perfect for any occasion.


Ingredients

  • 23 medium sweet potatoes (about 3.5 cups peeled and cubed)
  • 2 tablespoons extra virgin olive oil (or olive oil cooking spray)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Start by washing and thoroughly drying your sweet potatoes. Peel and toss the skin.
  2. Cut the peeled potatoes into cylinders, and then slice them into even 1/2-3/4 inch cubes.
  3. Place the cubed sweet potatoes in a bowl and drizzle with olive oil.
  4. Mix the paprika, garlic powder, kosher salt, and ground black pepper in a smaller bowl and sprinkle over the sweet potatoes.
  5. Toss everything together until the sweet potatoes are coated with the oil and spices.
  6. Preheat your air fryer to 400°F for 2-3 minutes if it doesn’t have a preheat setting.
  7. Spray the air fryer basket with cooking spray and add sweet potato cubes in a single layer.
  8. Cook for 14-17 minutes, flipping halfway through the cooking time.
  9. Rest sweet potatoes for 3-5 minutes in the air fryer after cooking before serving.
