- 2–3 medium sweet potatoes (about 3.5 cups peeled and cubed)
- 2 tablespoons extra virgin olive oil (or olive oil cooking spray)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Start by washing and thoroughly drying your sweet potatoes. Peel and toss the skin.
- Cut the peeled potatoes into cylinders, and then slice them into even 1/2-3/4 inch cubes.
- Place the cubed sweet potatoes in a bowl and drizzle with olive oil.
- Mix the paprika, garlic powder, kosher salt, and ground black pepper in a smaller bowl and sprinkle over the sweet potatoes.
- Toss everything together until the sweet potatoes are coated with the oil and spices.
- Preheat your air fryer to 400°F for 2-3 minutes if it doesn’t have a preheat setting.
- Spray the air fryer basket with cooking spray and add sweet potato cubes in a single layer.
- Cook for 14-17 minutes, flipping halfway through the cooking time.
- Rest sweet potatoes for 3-5 minutes in the air fryer after cooking before serving.
