A quick and nourishing meal with roasted veggies and savory chicken sausage, perfect for busy weeknights.


Ingredients

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz) – robust Italian flavor

Instructions

  1. Begin by chopping the veggies. Add them to a large bowl and drizzle with avocado oil, tossing until they are well coated.
  2. In a separate smaller bowl, mix together the garlic powder, onion powder, Italian seasoning, salt, and pepper.
  3. Sprinkle the spice blend over the veggies and toss again, ensuring every piece is enveloped in those aromatic flavors.
  4. Slice the chicken sausage into 3/4 inch rounds and add them to the bowl with the seasoned veggies. Gently toss everything together until combined.
  5. Preheat your air fryer to 390 degrees F (if required) and spray the air fryer basket with cooking spray.
  6. Add the mixture to the air fryer basket in an even layer. Close the basket and cook for 10 minutes, flipping the mixture halfway to ensure even cooking.
  7. Once done, remove the sausage and veggies from the air fryer. Serve them warm, either on their own or with a side of cooked cauliflower rice or brown rice.

Notes

Make ahead by prepping the veggies and sausage 24 hours in advance. Leftovers can be stored in the fridge for up to 3 days.
